Almonds, Hazelnuts & Peaches Cake

This is a super-simple recipe… but with fine ingredients it can be superb… Of course in London it’s not easy to find succulent peaches… but when are ripened they can be sweet and not bad.

My mum did this cake with the peaches of her garden in Italy and of course the taste should have a twist… she is use to make it with 3 or 4 times the quantity of ingredients… of course she has one peaches’ tree at her disposal!

  • 1. Beat the creamy butter and the sugar, add rum, salt and one egg at a time
  • 2. Combine almonds and hazelnuts ground
  • 3. Pour the mixture into a buttered and floured pan and bake it at 170 degrees for 30 minutes or until a toothpick comes out clean
  • 4. Once chilled cover the cake with a peach compote: clean and cut 2 or 3 peaches and cook in the microwave for 2 or 3 minutes or until they are soft and then blend them with a tablespoon of sugar
  • 5. Lay peaches’ slices to cover the top of the cake
  • 6. Brush the peaches’ slice with the same peaches’ compost
  • 7. Sprinkle with almonds’ slices or chopped hazelnuts
